La Laguna Fizz

My absolute favorite cocktail is a twist on a bees knees that we started calling a Laguna Fizz
What’s a bees knees?

Bee’s Knees

2oz gin
3/4 honey simple
3/4 lemon
Shaken and served straight up
What’s my twists? Vanilla Lavender. oh. my. goodness. I can’t get enough, here’s the recipe of EXACTYLY how I make it. My husband and I started calling it a Laguna Fizz

Laguna Fizz

2oz Hedricks Gin
3/4 oz freshly squeezed lemon juice
3/4 oz Vanilla Lavender Honey simple syrup ( recipe at the end of this)
Shaken served over nugget ice (does it have to be nugget ice? No, but nugget ice makes everything better)
add 2 oz sparking water, light stir
2 dashes lavender bitters

Vanilla Lavender Honey recipe

We found the perfect vanilla lavender honey from the brand Hani honey. We do a 3/1 ratio of water to get it liquified just enough to mix it in with our drinks easily. We use a kitchen scale for precise measurements 
16oz  jar of honey- 5.3 oz of water 
heat it up just enough to blend it all, I put it on low for a few minutes, no need to get it too hot. 
I hope you enjoy my favorite cocktail! This is one our top drinks for our mobile bartending company, we are located in Snohomish County which is close to Mount Vernon's famous lavender fields and farms. So getting those fresh Lavender sprigs is a bonus to garnish this delicious drink.
